Boosting Carrot Juice

Carrot-Apple-Ginger-Juice_07I am crazy for carrots – it’s not even a secret. They are my number one snack, that I always carry in my bag. Dipped in hummus – you got me. For my birthday this year my guy friends even baked a carrot cake for me (it took them about three hours, they later told me), but it was just the sweetest thing.

I’ve always pitied that my blender wasn’t the biggest fan of blending carrots (no vitamix owner here), so I finally ended the self-pity and got myself a juicer! It’s incredible how huge they are – for the first 15 minutes I was convinced that they had sent me the wrong one – I hadn’t ordered the XXL version! Oh well, there goes my kitchen storage..

One of the first juices I made was this one. My love for carrots combined with the sweetness of apples, the sourness of lemon and the spice of ginger. Just perfect! I often start my morning with this ever boosting carrot juice.

Boosting Carrot Juice

  • Prep Time: 5
  • Servings: makes about 250ml

  • 2 larger carrots
  • 2 small apples (or 1 large)
  • juice of ½ lemon
  • 15g fresh ginger

  1. Wash all the ingredients and peel the ginger. Remove the lemon zest and white peel, as it makes the lemon juice taste bitter.
  2. Put all through the juicer. Juice is the best when consumed right after making it. (Also, don’t forget to wash your juicer quickly, it’ll make things way easier – trust me.)
  • Ohhh my family loves to make this juice, every sunday they made for the whole family and it’s delicious!! Although I prefer to add a boot (it’s more tasty) and I’ve never tried it with ginger, but I’m definitely giving it a try!!
Ps. I’m really excited with your website, it has really inspired me!! <3

This looks amazing! Congrats on the blog! I know you were very anxious to show us your blog, and it looks great!
Sadly, I don’t own a juicer or vitamix, what do you think i should do? Should I shred the carrot first?

    • livingthehealthychoice

Ah, that’s too bad! I wouldn’t advice to blend carrots, it never worked out well for me at least. You could always buy carrot juice though and mix it in your smoothie. That’s what I always did.

  • Elin

Looks way to good! Will definitely try it when I come home from exams tomorrow..

  • Anne

Hello :) Can I just ask you what brand of the juicer do you have? My mum and I are considering to buy one :)

Am I the only one, who don’t like this ? Maybe I’m weird … or I just can’t do juices and smoothies :( But I still love your blog, don’t worry :) I’m also excited for the videos. xx
