Zucchini Noodles

Zucchini_noodles_3For years pasta was the only meal I ever made. Pasta with tomato sauce or pesto, some cheese and that was it – I was a happy eater. It was quick and delicious, no more cooking or kitchen creativity needed. I would solely live off pasta whenever I was home alone. Let’s face it, even if pasta tastes great, it’s not a real healthy and balanced meal. So while nowadays I will have some (gluten-free) buckwheat pasta now and then, I have become a big fan of vegetable pasta.

Vegetable noodles are quick and easy to prepare, can be eaten raw or cooked, and topped with a good sauce can be pretty delicious. Zucchini are working the best, followed by carrots. The key for well shaped vegetable noodles is a spiralizer. I know, there are so many different ones out there, so here a little story that made me not think about my choice twice. When I grew up, we moved a lot. Different cities and places and though I really enjoyed it, one thing always bothered: the small kitchens! Up until now we always had to sacrifice kitchen space. Often it wasn’t even possible to fit two people in the kitchen room. I am beyond happy that for the first time in my life I have a kitchen that is big enough for me to do my little dance ritual whenever a mango or avocado is ripe. One thought is hard to shake off after all that time though: “I can never fit this utility in my kitchen!”. I just can’t get rid of the habit to buy the smallest kitchen supplies possible. So when I looked online to get a vegetable spiralizer, I was shocked to see how huge these things are! So – I might not own the most qualitative spiralizer, but sure the smallest! (Have a look at my friend in the “my pantry” section.) It works just as well and making the noodles feels a lot like sharpen a pencil.

Zucchini Noodles Recipe

  • Prep Time: 5 minutes
  • Servings: 2

Ingredients

  • 2 zucchinis
  • 2 carrots

Instructions

  1. Spiralize the zucchinis and carrots.
  2. Serve it with a sauce of your choice. I here used my <a title="Chunky guacamole" href="https://livingthehealthychoice.com/chunky-guacamole/">guacamole recipe</a>. Pesto and <a title="Delicious Hummus" href="https://livingthehealthychoice.com/hummus/">Hummus</a> go here just as well! (As not everyone enjoys raw zucchini, you can simply cook your spiralized vegetables in water for about 5 minutes.)
