Red Velvet Smoothie

Everybody (right?) knows it – the red velvet cake.
Inspired by this cake, I have come up with a smoothie. It might not taste exactly like the (very sugary) cake but instead, it’s filled with many nutrients. The base of the smoothie is beetroot which gets mixed with berries and raw chocolate. As an extra little kick, the smoothie is made with a yogurt base. Here you can decide yourself which kind you would like to use. It all tastes great, whether it’s cows’ milk yogurt, soy yogurt or coconut yogurt.

Red Velvet Smoothie
(makes two glasses)

1 small red beetroot (peeled 80g)
1-3 tbsp raw cacao powder
3-5 Medjool dates
200g frozen berries (e.g. blueberries)
200ml plant milk
100g (plant)yogurt

Peel the beetroot and mix them with all other ingredients – except for the yogurt – in a high-speed blender. This might take a minute or two.
Divide the yogurt between two glasses and fill up with the smoothie.

Tip: You can determine yourself how much raw cacao powder you want to add, according to how chocolaty you want the smoothie to be. Same with the dates, as they determine the overall sweetness.
