Basic Veggie Bowl
Being a huge fan of raw foods, I often eat my vegetables uncooked. Especially during the summer I consider it as the most refreshing thing to eat (well, right after a big chunk of watermelon!). Whenever my time is limited or I don’t feel like being creative in the kitchen, I chop some vegetables and make a big veggie bowl. They are basic vegetables, nothing too fancy. So it’ll be most likely that I have them at home. I also often add a batch of quinoa, which will give me a good portion of healthy whole grains and enough complex carbs to master the day.
Basic Veggie Bowl Recipe

- Servings: 2
Ingredients
- ¼ cucumber
- 2 carrots
- 100g sweet corn
- ½ avocado
- ½ sweet bell pepper
- 1 handful of leek
- 100g quinoa (+200ml water)
- 1-2 tbsp hummus
- 1 handful of sunflower seeds
Instructions
- Weigh and rinse the quinoa. Bring 200ml water to boil, add the quinoa and let it simmer for 15 minutes.
- Wash the vegetables and chop them to your liking.
- In a saucepan slightly roast the sunflower seeds on medium heat until they are of a gold, light brown.
- Arrange the vegetables in a bowl together with the cooked quinoa, add hummus and sprinkle it with the sunflower seeds. Enjoy!
