No meat meatballs

Today I have a very vegan recipe for you, that couldn’t sound less vegan. Meatballs. However, instead of using meat, they are made out of sunflower and pumpkin seeds, dried tomatoes and chickpeas. I promise you they will not taste like meat (sorry!) and are super delicious. I usually make them to prep up those simple spaghetti with tomato sauce and voilà, you have an eye catcher for sure.

For 10 veggie balls:

80g dried tomatoes
100g chickpeas
60g sunflower seeds
60g pumpkin seeds
½ glove of garlic
1/2 small red onion
1 pinch of cayenne pepper
salt & pepper

Preheat the oven to 180°C.
In a food processor, mix sunflower seeds and pumpkin seeds until they are of a flour like consistency.
Dice red onion and garlic and add to the food processor with all other ingredients. Mix until an even dough is formed. Season with salt and pepper.
Wet your hands a little bit and start forming little balls (approx. one heaped tablespoon). Put them on a baking tray lined with baking paper.
Let them bake in the oven for about 20 minutes. The exact baking time can vary from oven to oven. The balls are done when they are solid from the outside and start turning slightly brownish.
