Pumpkin Macaroons
Pumpkin Macaroons Recipe

Ingredients
120g almonds (or almond flour)
20g desiccated coconut
60g pumpkin puree
2 tbsp maple syrup
¼ tsp cinnamon
1 pinch of nutmeg
chocolate sauce:
1 tbsp coconut oil
1 tbsp raw cacao
½ tbsp maple syrup
Instructions
1. Preheat the oven to 180°C.
2. Mix the almonds into coarse flour by using a blender or food processor.
3. In a bowl mix all the ingredients.
4. Form little macaroons, using your hands and line them on a baking tray. (It works the best if you mould them carefully in the heel of your hand.)
5. Let them bake for about 20 minutes or until they are gold-brown. Take them out the oven and cool.
6. In a pot heat coconut oil, cacao and maple syrup on medium heat and whisk constantly. Use a spoon to drizzle the sauce on the macaroons. Enjoy!
