Watermelon Salad



Watermelon Salad Recipe

  • Prep Time: 15 minutes
  • Servings: 4 portions


450g watermelon
250g cherry tomatoes
250g cucumber
100g feta cheese
1 red onion
2 tbsp olive oil
½-1 bunch parsley
1 handful basil leaves
a couple pinches of sea salt
a handful of walnuts


  1. In a big bowl combine chopped up watermelon, cherry tomatoes, cucumber and red onion.
  2. In a pan, gently roast the walnuts on medium heat for 1-2 minutes until they begin to smell nice and turn golden.
  3. Coarsely chop the parsley and add it into the bowl with basil the leaves, sea salt and olive oil.
  4. Gently mix the salad and top it off with the (crushed and) roasted walnuts. Enjoy!
